The target is midnight at the start of 25 December in the time zone you pick, not a hard-coded year. Before that morning the blocks show the days, hours, minutes, and seconds left. At noon on the 25th the day has already begun, so the page moves on to the next 25 December. That is the useful switch for a screen you leave in a hallway: on Christmas morning it finishes, and later the same day it is counting toward next year instead of sitting on zero. Is the target Christmas morning or Christmas Eve?
Midnight at the start of 25 December. Christmas Eve is still a full set of blocks away until 00:00. If you want the countdown to end when a meal starts, set a custom target on the main countdown page and keep this page for the date itself.
Can I show only the number of days?
Yes. Set Units to Days only. A partial day still counts as one until midnight, so the number does not drop to zero while hours remain. The other modes keep hours, minutes, and seconds on the same screen.
